I have chosen this recipe to share with you, because its easy to make, delicious to eat on these wintry days and it can be eaten solo or with company.
Recipe:
-20 Medium Cherry Tomatoes
-100ml Olive Oil
-1 Sprig of Rosemary
-Salt and Pepper
-Knob of Butter
-1tbs Chopped Rosemary
-80-100g Fresh Mascarpone Cheese
-250g Cooked Penne
-A handful of fresh rocket, coarsley chopped
Method:
-Preheat the oven to 180C
-Put the tomatoes in an oven tray, add the 100ml olive oil and mix until the tomatoes are
covered in oil.
-Remove the rosemary leaves from the sprig and sprinkle over the tomatoes.
-Season with salt and pepper.
-Roast in the oven for about 20 minutes or until the tomatoes are soft and their skins start to split.
-Then in a nonstick pan, heat the 2tbs olive oil and add the butter.
-Once the butter has melted, add the chopped rosemary and the tomatoes.
-Fry the tomatoes, squashing them to release the juices.
-Add the mascarpone and stir constantly until it melts, then add the pasta and cook until it is heated through.
-Remove from the heat, add and mix through the rocket, check the seasoning and serve immediately.
Serves 1(double up quantities for 2 people)
